Lavender will be there this Thursday and I will bring rosemary too; though usually Fanci Farms has it also in case you want to try this honey recipe.

Dear LocalHarvest Customer,
I was a farmhand on an herb farm in upstate New York. It was a beautiful spot, made more so by the farmer's devotion to the beauty and magic of herbs. Every July -- lavender harvest season-- I think of the hours I spent sitting on an overturned five gallon bucket next to a huge lavender plant, head abuzz with its incomparable fragrance as I cut bunch after bunch of the long, thin stalks. That summer I learned to make many herbal treats, including herb-infused honey. If you're a fan of honey on toast, this fancy version may please you. I love it!
Herbal Honey
Take 4-6 stems of fresh lavender, or 2 four-inch pieces of fresh rosemary, and submerge in a one-pint jar of honey. Screw the cap on tight and put in a sunny window for two weeks. Every day or two, invert the jar several times. Taste after two weeks and see if the herbal flavor is strong enough for you. If not, repeat for one more week. You may remove the herbs before using the honey, or leave them in.
